Ingredients

  • 1pre-baked pizza crust (see recipe published in my recipe collection)
  • 1 tablespoonolive oil
  • 1small onion, thinly sliced
  • 4cooked abalones, sliced
  • 1/2 cupdiced red bell pepper (about 75 grams)
  • 1 cupwhite sauce
  • 1/2 cupdiced green bell pepper (about 75 grams)
  • 2 cupsshredded mozzarella, mantecoso, or chanco cheese (about 200 grams)
  • 1/3 cupsliced pitted black olives (about 50 grams)
  • 2 tablespoonsgrated Parmesan cheese
  • 1 teaspoonpaprika
  • For the white sauce
  • 3 tablespoonsbutter (about 42 grams)
  • 4 tablespoonsall-purpose flour (about 32 grams)
  • 2 cupsmilk (about 480 ml)
  • 2 cupshot abalone broth (about 480 ml)
  • 3/4 cupheavy cream (200 ml)
  • 1 1/4 teaspoonssalt, or to taste

Steps

    How to cook the abalone: Make sure to buy tenderized abalone, or tenderize it yourself. Use a brush to clean the abalone thoroughly with cold water. Remove the hard tip from the abalone. Place them in a pot with cold water, bring to a boil, and simmer gently until tender, about 1 hour. Let cool. Slice the cooked abalone thinly. Save the cooking liquid for the white sauce.

    For the white sauce: In a pot, melt the butter over medium heat. Add the flour and stir into the butter. Cook the flour slowly until lightly golden. Add the milk and stir well. Add the hot abalone broth and salt, and stir again.

    The sauce will thicken; cook slowly for about 10 minutes to fully cook the flour. Stir constantly so the flour doesn't burn on the bottom. Finish the sauce by adding the cream and cook for a couple more minutes.

    To prepare the abalone: In a small pot, heat the olive oil over medium heat and sauté the onion. Add the abalone and white sauce, and heat through.

    Spread the abalone with sauce over the pre-baked pizza crust. Sprinkle the mozzarella and Parmesan cheese mixed with paprika on top. Sauté the bell peppers in a skillet with a little olive oil and scatter over the cheese. Add the olives and finish baking at high temperature until the pizza edges are golden brown.

    Slice the pizza into as many triangles as you like.
