for 2 KG cake

2 cupscold whipped cream (chilled overnight)
3 tbspicing sugar (optional)
1/2 tsppowdered gelatin
1 tbspcold water
Vanilla extract/ essence for flavor
gel food colour if desired

Chill your mixing bowl and beaters for 5-10 minutes in the freezer
add cold water to the gelatin and let it bloom for 2-3 minutes
melt the bloomed gelatin in a microwave for 5-10 seconds and let it cool but not dry up

On low speed, whip sugar and whipping cream in chilled bowl until nice soft peaks that tip off to the side form.

Add the gelatin slowly as you continue to beat on low speed.

Add vanilla extract and desired colour. Increase speed and beat until firm upright peaks form that do not fall over at the tip.

Test the firmness of your cream by scooping it with a spatula and turning the spatula. Th cream should not fall. Add the whipped cream using a spatula into piping bag and decorate dessert as desired.
