Ingredients

1 loaf (2.75″ x 6.5″ x 2.25″ deep pan)
  1. Matcha streusel
  2. 32 g (1/4 cup)cake flour
  3. 1 g (1/2 tsp)matcha powder
  4. 25 g (2 tbsp)granulated sugar
  5. 28 g (2 tbsp)cold unsalted butter
  6. Matcha pound cake
  7. 113 g (1/2 cup)unsalted butter, room temperature
  8. 100 g (1/2 cup)granulated sugar
  9. 2eggs, room temperature
  10. 100 g (3/4 cup)cake flour or low protein flour
  11. 2 g (1/2 tsp)baking powder
  12. 3 g (1/2 tbsp)matcha powder

    Matcha streusel: Using a pastry blender or a fork, cut the butter into the flour, matcha powder, and sugar mixture until it resembles a coarse meal. Set aside in the fridge until needed.

    Matcha pound cake: Using an electric mixer or hand whisk, beat butter and sugar together until creamy and fluffy.

    In a separate bowl, whisk the eggs until loose. Gradually add the lightly beaten egg into the butter. Mix briefly after every addition and scrape the bowl as needed.

    Sieve the flour and baking powder into the butter mixture. Using a silicone spatula, mix just until combined.

    Take out half of the batter and set it aside. Sieve in the matcha powder into the remaining batter. Mix again just until combined with a spatula.

    Assembly: Line parchment paper into a 2.75″ x 6.5″ x 2.25″ (7 x 16.5 x 6 cm) deep pan or simply butter and flour the pan. *if using a standard 8″ x 4″ (22 x 12 cm) loaf pan, you can double this recipe and bake it longer or until a toothpick inserted in the cake center comes out clean.

    Spread the matcha batter evenly into the pan. (Optional) Using a spoon, drag the batter lengthwise from 1 end to another, to make a groove on the center.

    Add the yellow batter and spread evenly. Then cover the batter with matcha streusel on top.

    Bake in a preheated oven at 340°F (170°C) for 50 minutes or until a toothpick inserted in the center comes out clean. Remove from the pan immediately to cool.
