Peppered Chicken

This peppered chicken is very delicious. The chicken, infused in the sauce, makes a very tasty and appealing meal. The aroma of the sauce in it's self is very inviting.
*TIPS:
1. If you are in a hurry or feeling too lazy to rigorously stir and combine all ingredients, simply add seasoning and spices first before adding water. The water will settle the ingredients and all you have to do is give it a little stir. This is especially useful if the water you are adding will not cover the ingredients and you are using large quantity of ingredients.
2. Do not overcrowd chicken when frying so as to get even colour on all pieces.
3. Do not overcook vegetables in sauce because:
A. You are going to cook it further when you add fried chicken.
B. You are stir frying it. When you overcook stir fried food, it becomes mushy and unattractive.
4. It is important to combine the chicken and sauce in the pan on low heat. This is because the sauce is made up of cut vegetables, not grinded ones. The stir frying and steaming with the pan lid closed allows the juices of the sauce to infuse into the chicken.

Steps

Prepare fried chicken first.

Deskin, cut and wash chicken. Transfer to a pot and put on heat source.

Add in onions, spices and seasoning.

Add water.

Cover pot and allow to cook to desired softness.

Strain in a colander when cooked.

Add oil and onion in a frying pan. Allow to heat up.

Add in chicken and deep fry. Fry in batches if the quantity of chicken is much and you are using a small frying pan.

Transfer to colander.

To prepare sauce, put a different pan on heat source.

Add in few tablespoons of oil and all the cut vegetables.

Add in spices and seasoning. Stir fry till cooked but not overcooked.
