Ingredients

4 servings
  • 4eggs
  • 2 tbspcoconut milk (1tbp solid white and 1 tbsp of fluid)
  • 1 tsppepper
  • 1 tbspsalt
  • 1/2lady finger chilli (optional)
  • 1onion (diced)
  • 1yellow pepper (diced)
  • Any other filling of your choice
  • For sprinkling over
  • Italian grated cheese (or cheese of choice)

Steps

  1. 1

    Preheat oven to 160. Add eggs to bowl an whisk for 1 minute. Add salt, pepper and coconut milk and whisk for 30 seconds.

  2. 2

    Add all other ingredients and mix in. Butter tray and Add baking paper to the bottom then pour your mixture in.

  3. 3

    Place in the oven and bake for around 20 minutes or untill firm and golden on top.

  4. 4

    Sprinkle with your favourite cheese 🧀
