Mercimek çorbası / Turkish Lentil Soup

Comfort food for a winter like this..🥣
Previously, I shared a Middle Eastern version of Lentil soup that didn't require blending.
Since it's a holiday, I'm sharing a Turkish restaurant-style Lentil soup recipe from my husband, with a creamier and smoother texture.
But the spices are simpler, as Turkish cuisine is not as complex as Middle Eastern cuisine.😅
NOTE:
**For the water-to-lentil ratio, use the same cup/glass.

Steps
- 1
In a pot, heat olive oil and butter, add the chopped onion and sauté until soft, then add the potato, sauté for a while, add the red lentils and mix well.
- 2
Add the chicken/beef broth, or plain water if you don't have broth. Let it cook until it boils.
- 3
Once boiling, add salt, ground black pepper, and if desired, add seasoning/broth powder, mix well, cover the pot, reduce the heat, and cook until the potatoes and lentils are tender.
- 4
Turn off the heat, let it cool slightly, then blend until smooth (you can use a hand blender, food processor, or blender, depending on what you have).
- 5
Return it to the pot, and if the texture is too thick, you can add water, then cook while stirring to prevent the bottom from burning, cook until the desired thickness is reached, and adjust the salt to taste.
- 6
Serve while warm, it can be served with croutons, pita bread, Lavash bread, bazlama bread, or as you like, I personally prefer it with raw vegetables 😋
- 7
Enjoy and hope it's useful 🥰
- 8
Note: For the topping, if you want to add it, melt 2 tablespoons of butter and half a teaspoon of chili powder, cook on low heat until slightly bubbling.
- 9
And the topping is ready to use as desired. 😉
