Ingredients

  • 1/4watermelon
  • 100 gfeta
  • 30 grocket
  • Mint dressing
  • 60 mlolive oil
  • 20 mlwhite balsamic vinegar
  • 5 gfresh mint
  • TT salt
  • TT pepper

Steps

  1. 1

    Mint dressing: Roughly chop the mint. In a jar shake the olive oil, white balsamic vinegar, chopped mint, salt and pepper.

    Cut watermelon into cubes. Wash rocket. Mix the watermelon and rocket. Crumble the feta over and pour the dressing. Enjoy cold.
