Take a bowl and add into besan, Rice flour, salt, turmeric powder and red chilli powder and mix well

Then wash the brinjal properly and cut into thin slices

Last add the pinch of baking powder and water as required mix with blender properly and make a smooth batter

Further. Dip the brinjal slices in the batter evenly

In a kadai or pan heat oil. When the oil becomes medium hot then gently place them in medium hot oil for frying. You can use sunflower oil or peanut oil or any neutral oil with a high smoking temperature.

Serve the beguni bhaja hot or warm with mint coriander chutney or tamarind chutney or tomato ketchup.
