Wash, rub and dry the potatoes. Cut them into wedges with the skin on.

Rub salt, olive oil and mixed herbs into the wedges, set aside for 10 mins.

Deep fry in hot oil until crisp.

Sprinkle more herbs on top, add salt if you want, serve hot with ketchup.
