Oil-free Banana Kiwi Cake

I had some kiwis in my refrigerator, so I replaced the apples in banana apple bread and made this unexpectedly delicious cake. All my friends loved this more than my usual banana apple bread.

When mixing the kiwi and egg into the bananas, it may splatter, so please use a big bowl. Both the bananas and kiwis should be fully ripened. If your bananas are medium-sized, use two and a half. If you use more bananas, it will be sweeter. Use a bread knife to cut neat slices. Recipe by Crepemeter

Ingredients

  1. 2 largeRipened bananas
  2. 2Ripened kiwis
  3. 90 gramsSugar
  4. 1Egg
  5. 230 gramsPancake mix
  6. 1 dashLemon juice (optional)

Steps

    Lightly sprinkle the bananas with lemon juice, add 70 g of sugar, and use an electric mixer to mix it well. Let sit for 15 minutes.

    Peel the two kiwis and cut into 1 cm cubes. Put into a heatproof container.

    Sprinkle with 20 g of sugar, heat in the microwave for 2 minutes, and mix with chopsticks. Preheat the oven to 160°C.

    Add the kiwi sauce from Step 3 to the banana bowl from Step 1 and mix well.

    Next, add an egg and mix well.

  6. 6

    Add the pancake mix and mix together with a spatula. Line the cake pan with parchment paper and pour the batter in.

    Bake in an oven preheated to 160°C for about 50 minutes. Remove from the oven and let sit for 10 minutes.
