Greeks make a lot of different Koulourakia. The ones we make for Easter have butter and they are crunchy on the outside but extra fluffy on the inside. They are perfect with coffee.

Greeks make a lot of different Koulourakia. The ones we make for Easter have butter and they are crunchy on the outside but extra fluffy on the inside. They are perfect with coffee.
Steps

Cream butter and sugar.

Add the eggs, one at a time. Add the milk, the orange juice, vanilla essense and the zest. Don't worry if the mixture appears crumbled, it will be ok again once you add the flour.

In another bowl, combine half of the flour with the baking powder, baking soda and salt. Pour the flour mixture in the butter mixture and mix. Keep adding as much flour as needed, so as to have a soft, non-sticky dough.

Let the dough rest for 15 minutes, then shape the cookies as desired. The most common way is to take a bit of dough, make a strip, cut it in 3 pieces and braid them. You can actually make any shape you want, just making sure they are about the same size.

Brush your Koulourakia with egg wash and bake (180°C, 10' -20' depending on the size), until they are golden.
