Ingredients

  1. 1large cup red lentils (about 200 grams)
  2. 1potato
  3. 1onion
  4. 1 piecepumpkin (about 100 grams)
  5. 1zucchini
  6. celery
  7. cilantro
  8. salt to taste
  9. 1Kiri cheese wedge or 1 ounce (28 grams) cream cheese

Steps

  1. 1

    Wash and chop the vegetables. Place them in a pot with the lentils and add enough water to cover all the vegetables. Add salt to taste.

    Cook over heat until the vegetables are tender. Let cool slightly, then blend with an immersion blender or regular blender.

    Add the cheese and blend well until smooth. Serve the soup in a bowl.
