We make this often at home and just got around to sharing the recipe today. It's a chili paste popular in Northern Thailand.
Cooking Instructions

Dice the tomatoes into small cubes and set aside. Pound the dried chilies, garlic, and shallots until fine. Then add 1 tablespoon of shrimp paste and pound until the paste is well mixed.

Heat a pan with a little oil. Once the oil is hot, add the pounded paste and stir-fry until fragrant. Add the ground pork and stir-fry until the pork starts to cook. Then add the tomatoes and stir, mashing them until they break down. Add a little water and season with seasoning powder, MSG, oyster sauce, and fish sauce to taste. Let it boil or reduce until the desired consistency is reached. Serve in a bowl topped with chopped cilantro, ready to eat.
