In a pan add the water and bring to boil.

Clean the Tamarind seeds and put then in the boiling water and boil for about 10 to 15 minutes.

Set aside and allow to cool then squeeze out the juice and sieve.

In a blender, add onions, garlic, chillies, salt and the Tamarind juice and blend.

Bottle and refrigerate.

Best served with Viazi Karai, Bhajia and Samosas
