Cochinita Pibil with Textured Soy
A delicious Yucatecan dish, made in a version free from animal products.

Rehydrate the textured soy protein in boiling water with 1 garlic clove, 2 whole allspice berries, and a pinch of oregano. Let soak for 10 minutes, then drain in a strainer and squeeze out excess water.

Blend the achiote paste with orange juice, lime juice, vinegar, roasted tomatoes, honey, spices, and salt until smooth.

Pour the blended mixture over the soy protein, mix well, and let marinate for at least one hour.

Line a pot with banana leaves on the bottom and sides. Add the marinated soy mixture, cover with more banana leaf, cover the pot, and cook over low heat. Let simmer for 5 to 10 minutes.

Serve in tacos, on tostadas, in sandwiches with black beans, or on panuchos topped with pickled Xnipec onions and habanero salsa.
