First time making a carrot cake and this tastes amazing! Forget to take a pict of the cream cheese though. So, long time ago when I first tried a carrot cake (from a bakery shop), it was always the cream cheese that make it good. But this is so delicious even without the cream cheese. Will be our new favorite comfort cake! Thank you!

A delicious hit in our house! So moist and packed with flavor! I did omit the walnuts and raisins at the request of my husband and children. I personally prefer raisins in my carrot cake for the added sweetness, moisture, and flavor, but I was out voted this go-around. I'll make a scaled down cake just for myself with raisins in it sometime. Lol

My Legendary Carrot Cake always lift everyone's sprit. I cooked them as we needed them. Melbourne is in the 2nd lockdown now due to COVID-19.

I used the pineapple juice from the can to make the frosting and it worked out great.

Exciting! Very easy and this is my 1st carrot cake ever. I’m too lazy to make the cheese frosting since i need to make powdered sugar from scratch 🙈

Not very fluffy but delicious. I used a Koppaberg Pear Cider instead of pineapple juice

Dusted with chocolate and cinamon. Dont like pineapple so tge liquid was Kopaberg Pear cider.
