These are very soft, fluffy, crispy lentil fritters from South India. It is served with sambar and coconut chutney.
Steps

Wash the dal properly and soak it with water for 4-5 hours.

Drain all the water then grind it to a smooth paste in a mixer grinder. Use little water if needed.

Take it out from the jar put it in a bowl. Beat the batter with your hand in one direction for 2-3 minutes. This makes the batter more fluffy.

Now add chopped green chili, chopped curry leaves, things, and salt. Mix well. Add 2-3 tbsp rice flour to make it more crispy. Mix well.

Heat oil in a pan. Wet your palm, take lemon size batter. Flatten it slightly. Make a hole in the center and drop it in hot oil. Fry the vadas in medium flame.

Fry both the sides till it becomes golden and crispy. Serve the medu Vadas with coconut chutney and sambar. Serve hot.
