Marinated Salmon Fajitas with Vegetables

Today is Fajita Day, the perfect excuse to make them for lunch.
And here’s a question that left me speechless for a moment (which is rare for me) after I sat down at the table: What’s the difference between fajitas, tacos, and burritos? 🤨🤔
Well, all three are star dishes—though there are many more—in Mexican and Tex-Mex cuisine. While they’re prepared differently around the world, the main difference is the tortilla: all are round, but burritos and fajitas use wheat flour tortillas, while tacos are usually made with corn tortillas (and are typically smaller). There’s more: generally, fajitas are the only one of the three that are served unassembled, meaning the tortillas are served on the side and the other ingredients are in separate dishes, so everyone can fill them as they like. Burritos are usually folded up like a little package (with at least one end closed), served already filled, and often include beans and more sauce. I’ve read that the name comes from street vendors who sold them while traveling with a donkey, so people would ask for “el burrito.” Finally, tacos—the truly Mexican kind—are smaller, usually just folded in half, already filled, and always served hot or warm.

Cooking Instructions

Chop the vegetables and mix them together until well combined.

In a small bowl, make the sauce by mixing all the ingredients until smooth and creamy.

Clean and cut the salmon.

Lightly brush a skillet with oil and warm the tortillas until just golden. (To give them a U-shape, let them rest for a few minutes inside a cup.)

Fill the tortillas with the vegetables, salmon, and sauce.

A while back I posted a recipe for beef fajitas, so it seemed only fair to post one for pork as well. Unlike that previous recipe, which used steak, this one uses ground meat. I did this mainly so the pork could be fried until it was really browned and delicious, something that'd be harder to do with a chop or fillet or shoulder steak. As for the veg, because we're in another snowstorm and I didn't feel like driving to the store, I stuck with what I had and used trusty green pepper and broccoli.
