Ingredients

3 to 4 servings
  1. 2 tbspdark soy
  2. 2 tbsplight soy
  3. 2 tbspChinese wine or mirin
  4. 2 tbspsesame oil
  5. 2 tbspchili oil or 1 tbsp tawaiin hot chili sauce
  6. Tspginger
  7. Tspmsg(optional)
  8. Tspgarlic powder
  9. 1 tbspcorn syrup (optional)
  10. Tspbrown sugar
  11. Tspwhite sugar
  12. For the chicken
  13. 2large and trimmed chicken thighs (.75lbs) sliced thin into inch pieces
  14. Add a few tablespoons of the the sauce along with some chili oil and sesame oil and allow to marinate
  15. 1 tbspcornstarch mixed in before cooking to velvet the chicken
  16. Veggies
  17. 3packed cups shredded Napa cabbage
  18. 1/2 cupthin sliced yellow onion
  19. 2 cupsJulienne carrots or equal to the amount of green beans or broccoli
  20. 12 ozwhite mushrooms sautéed or 5oz raw beech mushrooms (150g)
  21. bagFrench green beans snipped and halved (8oz bag) if using small broccoli florets instead so 2 cups
  22. Bundlegreen onions sliced horizontally into half inch slices (about 6 green onions)
  23. low mein noodles

Cooking Instructions

    Start by adding the mushrooms to the wok and cook them down very well until they have reduced in size and browned, remove and set aside.

    Cook your lo mein noodles, drain and set aside.

    Heat peanut oil in your wok until slightly smoking. Start by adding the chicken and cook until you see no more raw and remove and set aside. Add a little more oil and then add the beans and carrots for a few minutes until you see them getting seared. Add the green onions for an additional couple minutes.

    Add in the the Mushrooms and chicken and toss really well and cook until everything is getting a really good sear. Add the cabbage for another minute or until it breaks down.

    Add the noodles and toss well. Push everything to the side and add the rest of the sauce and let it start to simmer then toss everything together very well.
