Ingredients

Serves 4 servings
  1. 4chicken thighs (you can use a whole chicken if you prefer)
  2. 2 cupslong-grain rice (about 400 grams)
  3. 2onions, chopped
  4. Juice of 1 lemon (use more or less to taste)
  5. 1 clovegarlic
  6. 3 tablespoonsolive oil
  7. 2bay leaves
  8. Salt and pepper

    Place enough water in a pot to cover the chicken and bring to a boil. Add the chicken thighs and cook for about 30-35 minutes, skimming off any foam that forms. Meanwhile, prepare the rest of your ingredients.

    Remove the chicken thighs from the pot and set them aside in a bowl. Add all the remaining ingredients to the pot and let them simmer in the broth for 15-20 minutes. Strain the mixture, pressing with a spoon to extract as much liquid as possible. Return the broth to the pot, add the rice, olive oil, and chicken thighs, and gently stir to prevent the rice from sticking. Cook for 5-7 minutes. There should be about 6-8 cups of water (broth) in the pot.

    Pour the broth, rice, and chicken thighs (skin side up) into a baking dish. Make sure there is enough broth in the dish; if not, add a bit more hot water.
