Ingredients

2 servings
  • 1(about 1.5kg) Whole chicken
  • 1, halved Lemon
  • 2, quartered Onion
  • 1bulb, halved Garlic
  • 2 sprigsFresh rosemary
  • 2 sprigsFresh thyme
  • 3 tbspOlive oil
  • 2 tspSalt
  • 1 tspBlack pepper
  • 2 tspItalian seasoning
  • 1 tspGarlic powder
  • 1/2 tspRed pepper flakes
  • 4, cut into chunks Carrots
  • 500 gFingerling or baby potatoes

Steps

  1. 1

    Preheat oven to 375°F (190°C).

  2. 2

    Stuff chicken with lemon, 1 onion, garlic, rosemary, and thyme.

  3. 3

    Rub chicken with olive oil, salt, pepper, Italian seasoning, and garlic powder.

  4. 4

    Place chicken in oiled baking dish.

  5. 5

    Add carrots, potatoes, and remaining onion around chicken. Season with olive oil, salt, pepper, Italian seasoning, rosemary, thyme, and red pepper flakes.

  6. 6

    Bake for 2 hours, basting chicken and mixing veggies twice during roasting.

  7. 7

    Let chicken rest before carving. Serve with roasted veggies.

Tips

Baste the chicken and mix the veggies twice during roasting for better flavor.
