Garlic Potato Wedges

Firstly take 4 medium-sized potatoes, wash them; now cut into shapes as shown in the image below. Again wash them with water 3 to 4 times until you start noticing clear water. Now cover it and leave it as it is, for about half an hour.

Now take enough water in a pan, add some salt, once the water starts boiling drop down the potato pieces into it. Boil it for about 5 mins till its 50 percent done. Slowly drain the water over a strainer. Pour a glass of cold water over it to avoid further boiling. Now let it cool down a bit then sprinkle 2 tsp of oil over the wedges and slightly message the potato pieces. This step is important so that the potatoes doesn't get sticks to each other and the coating sticks well with the potatoes.

Now let's start making the coat, for this take a large bowl and start mixing all the dry ingredients like maida, cornflour, salt, pepper powder,red chilli powder, oregano flakes, baking soda and chilli flakes. Give everything a good mix.

Now coat the wedges with this dry ingredients, dust them and keep it aside. Repeat the same with the rest of the pieces.

Now add enough water in the remaining dry ingredients mixture and make a smooth paste out of it. It shouldn't be too runny or too thick, just like it should coat the wedges very well. Then add a tsp of ginger-garlic paste and mix it. Your coating (flour paste) is now ready.

Now heat a pan, add enough oil for deep-frying. Coat the wedges with the flour paste and gradually drop down the wedges into the oil. Keep the flame on medium heat and fry the wedges until it turns golden and crispy. Now remove them from the oil and keep it over a strainer. Repeat the same with the rest of the wedges.

Now heat another pan add a tbsp of butter then add crushed garlic, oregano flakes and chilli flakes and saute it for about 2 mins. Donot burn the garlic, just that the raw smell should go off. Then add the fried potato wedges to it and give it a toss so that it coats well with the wedges. Finally sprinkle some chopped coriander leaves and give it a final toss.

Your garlic potato wedges are now ready to serve. Enjoy this crispy starter with the dip of your choice.
