My Coleslaw (Cabbage & Carrot Salad)

Whenever I make pulled pork I make coleslaw. Sometimes my coleslaw has pickles or capers. Other times I add finely chopped onions. It is a flexible side dish for it always comes out good.

Ingredients

  1. 1apple
  2. 10 ouncesshredded cabbage (green, red, or a combination)
  3. 10 ouncesshredded carrots
  4. 1/4 cupmayonnaise
  5. 1/4 cupplain Greek yogurt
  6. 3 tablespoonsbrine from an olive or pickle jar
  7. 1 tablespoonDijon mustard
  8. 1 tablespoonapple cider vinegar
  9. A fewdrops of hot sauce
  10. Pinchcelery seeds
  11. Pinchsalt
  12. Ground black pepper
  13. 10olives, quartered lengthwise (optional)

Cooking Instructions

15 minutes
  1. 1

    Peel apple and cut into matchsticks.

  2. 2

    In a large bowl combine apple, cabbage, and carrots.

  3. 3

    In a small bowl combine rest of ingredients.

  4. 4

    Add dressing to salad and toss. Add olives, if desired.

  5. 5

    Serve at room temperature.
