Palak Paratha

Palak Paratha is healthy and flavorful paratha recipe prepared from spinach puree. It is a simple, tasty, and full of rich nutrients paratha recipe.
Palak is cleaned and blanched which is then pureed with ginger and green chili. Palak puree is added to wheat flour along with ajwain and jeera. Soft and smooth dough is kneaded and parathas are made.
Palak Paratha is mostly served with yogurt and pickle. You can also serve with mixed veg or paneer gravy for a wholesome lunch or dinner.

Pluck palak leaves and wash them well. In a pot take 1 cup water and let it come to a boil. Switch off the flame and put in palak leaves. Let it blanch for 5 minutes.

Strain the palak leaves and reserve the water to knead the dough and the remaining can be added to any gravy. Let palak leaves cool down.

Take blanched palak in a mixer jar along with ginger and green chili. Blend into a fine puree, adding water as required.

In a wide bowl take wheat flour, crush ajwain between palms and add it along with jeera, salt, and palak puree.

Combine well and add water to knead a soft smooth dough. Cover and let it rest for 10 minutes.

Make medium size balls from the dough, dust with flour, and roll them into a small circle. Apply oil and fold into a triangle. Dust with flour and roll into paratha.

Heat a tawa and place palak paratha on tawa. Brush with oil/ghee and roast till both sides are cooked properly. Remove onto a plate and cover. Prepare other parathas too.

Serve warm Palak Paratha with gravy of your choice of yogurt and pickle.
