Chinese-style Crispy Stir-fried Potato

I think that this dish is much healthier than deep-fried chips.

Stir-fry the potatoes over a high heat all the way and you will have a crispy result.
Especially after you add the seasonings the temperature in a frying pan will drop so keep on stir-frying over a high heat.
The key to making this dish is to julienne all the ingredients as thinly as possible and stir-fry quickly. 3-4 servings. Recipe by abichi.

Ingredients

4 servings
  • 1/4Red pepper
  • 1Green pepper
  • 3 mediumsized Potatoes
  • Other
  • 1Salt, to taste
  • 1as required Vegetable oil
  • Mixed seasonings
  • 1 tspSugar
  • 1 tspSoy sauce
  • 2 tspOyster sauce
  • 1 tbspShaoxing wine (or sake)
  • 1Pepper
  • 1 tspSesame oil

Steps

  1. 1

    Peel the potatoes and julienne. Rinse in salted water.

  2. 2

    Julienne the red and green pepper.

  3. 3

    Combine the ingredients of the mixed seasonings.

  4. 4

    Drain the potato in a colander.

  5. 5

    Heat the vegetable oil in a frying pan and stir-fry the potato over a high heat.

  6. 6

    When the potato is a little wilted add the red and green peppers and fry.

  7. 7

    Add the combined seasonings and stir well.

  8. 8

    Transfer onto a serving dish and serve.
