I never have time to make breakfast before I run off to work. So i normally don't eat. These are great to make ahead and warm up and run out the door.

Ingredients

  1. Base
  2. 3 cupShredded Hash Brown, Thawed
  3. 1EVOO cooking spray
  4. "Batter"
  5. 1yellow onion, diced
  6. 1 1/2 cupRotel Diced Tomato's
  7. 1green pepper, diced
  8. 1/2 cupgreen onion, chopped
  9. 1 tbspgarlic, minced
  10. 2 tspCilantro
  11. 1/2 tbspsmoked paprika
  12. 2 tspsea salt, grounded
  13. 1 tspground black pepper
  14. 1 packagesbacon, prepared & crumbled
  15. 1 1/2 cupshredded mexican cheese
  16. 12 mediumeggs
  17. 1/4 cupmilk
  18. Topping
  19. 1gravy or salsa (optional)

Cooking Instructions

    Preheat oven to 400°F

    Spray an extra large muffin with cooking spray.

  3. 3

    Pat a good amount of the shredded hash brown into a "basket" shape in each muffin hole.

    Spray with a little more cooking spray

  5. 5

    Bake for 15 minutes

    While this is baking, cook and crumble your bacon and prep your vegetables

  7. 7

    Add all of the vegetables to a large mixing bowl and mix well.

    Now add your eggs, seasonings, and milk and mix well.

  9. 9

    Mix in the bacon and cheese.

    Once the 15 minutes is up, pull out of the oven and spray with some more cooking spray. Pour a 1/2 cup of the mixture onto each hash brown basket.

    Bake for 25 minutes or until a toothpick is inserted and comes out clean.

    Carefully manuever out of the muffin tin and top with salsa or home made gravy. Enjoy!

    *Note: This makes 2 batches. 12 large muffins. You can use a regular muffin tin and adjust accordingly.
