Ingredients

  1. 1/2 kilogrambasbousa semolina without additives (3 measuring cups)
  2. 3 tablespoonsshredded coconut
  3. 1/2 teaspoonbaking powder or 1 teaspoon cake enhancer
  4. 3/4measuring cup sugar
  5. 3/4measuring cup milk
  6. 3/4measuring cup butter
  7. 1/4measuring cup honey or 1/2 measuring cup glucose syrup
  8. 1 packetvanilla (2 grams)
  9. Syrup 🍯👇
  10. 2 1/2 cupssugar + 1 heaping tablespoon
  11. 2 1/2 cupswater
  12. 1 tablespoonhoney or glucose syrup

Cooking Instructions

    Mix the semolina with baking powder, coconut, and sugar.

    In a saucepan, heat the milk, butter, and honey or glucose syrup until just warm, not hot. The honey should dissolve, and the butter should melt. If it gets too hot, let it cool slightly until it's warm to the touch. If you add it hot to the semolina, it will dry out and harden.

    Pour the mixture over the semolina and gently stir, not knead. Pour it into a greased pan with ghee or butter. Tap the pan twice on the counter to level the surface and remove any air bubbles. Smooth the surface with your hand if needed, using a little water.

    Bake in the oven at 350°F (180°C) until the top is golden brown.

    While the basbousa is baking, prepare the syrup. Place the sugar and water on medium heat. Once it boils, count exactly 7 minutes, then add the honey or glucose syrup and turn off the heat.

    Pour the hot syrup over the basbousa as soon as it comes out of the oven. Cover the top for 10 minutes to cool slightly, then serve. Enjoy! I hope you like my method.

    Note 🤓
    👈 The semolina should be medium, not too fine or coarse.
    👈 You can tell good semolina when you rub a bit in your hands and they stay clean without white flour residue.
    👈 The butter must be unsalted.
    👈 The sugar amount is just right, but if you prefer it sweeter, use 3 cups of sugar and 3 cups of water for the syrup.
    👈 Honey is much sweeter than glucose syrup, so stick to the written amount. Honey gives it a nice texture and consistency.
