  8. 3/4 teaspoonsalt (about 4 g)
  9. 1/2 cuprye flour or whole wheat flour (about 60 g)
  10. 3 1/2 cupsbread flour (about 450 g)
  11. 1 tablespooncocoa powder (about 10 g)
  12. 1/3 cupbrown sugar (about 80 g)
  13. 2 1/2 teaspoonsyeast (about 8 g)
  14. 1/4 cupunsalted butter (about 50 g)

Cooking Instructions

  1. 1

Pour the bread flour and milk into a saucepan.

  2. 2

Turn on low heat and stir constantly with a spatula until thickened.

  3. 3
  4. 4

Add all ingredients except the unsalted butter into the mixer in the order listed for the dough, starting with the wet ingredients followed by the dry ones.
Mix on low speed for 1 minute to prevent flour from flying out.
Mix on medium speed for 17 minutes.
Once the dough forms, add the butter and mix on medium speed for 6 minutes.

  5. 5

Mix until a thin film forms (even if it's not very thin, it's okay).

  6. 6

Let the dough rise for 60 minutes.
Cover the container with a damp cloth.
If the room is cold, you can place it in the oven to keep warm temporarily.

  7. 7

Press the dough with your finger; if it doesn't bounce back, it's ready.

  8. 8

Punch down the dough, roll it flat, and cut into pieces.

  9. 9

Shape into rounds and let rest for 15 minutes.
    Fold into long shapes.
Cover with a damp cloth and let rise for another hour.

  10. 10

Before baking, you can sprinkle some rye flour on top.
    Bake at 350°F (180°C) for 15 minutes.

  11. 11

    And it's done!
