  1. 300 grye flour
  2. 3/4 cupwater (about 200 g)
  3. 1 1/2 tablespoonssugar (about 20 g)
  4. 20 gbaker's yeast
  5. 3 1/2 tablespoonsbutter (about 50 g)
  6. 1 teaspoonsalt (about 5 g)
  7. 2 tablespoonspumpkin seeds and pine nuts (about 20 g)
  8. 1egg yolk

    Mix the flour, sugar, and yeast. Add the warm water and salt, then the melted butter and seeds. Knead for at least 5 minutes.

    Let rise for 1 hour, preferably at a temperature of at least 77°F. If it's winter, preheat the oven to 175°F, turn it off, and let the dough rise inside.

    After an hour, gently punch down the dough. Divide into 3 portions and place them in a loaf pan. Let rise for another hour.

    Brush with egg yolk, then bake for 30 minutes at 350°F.
