Cut and wash the brinjal and potato. cut onion and tomato.

In a pan, heat oil and add Cumin Seeds along with a pinch of Asafoetida or Hing. Let them crackle and then saute the onions in it until translucent. Now add the spices followed by the chopped Tomatoes. Cover and cook until soft and mushy. After cooking, add Brinjals and potatoes. Add salt and spices.

Cover and simmer after adding just about 1 cup of water on low heat. It is ready in about 18-20 minutes. In between, check it at regular intervals. They should be tender and soft with most of the water dried. That's the right time to take it off the heat. It's a dry Sabzi. So saute it well.
