Ingredients

  • 1/2 cupSoaked tamarind
  • 3-4 tbspSugar/ jaggery
  • 1 tspKashmiri red chilies powder
  • 1 tspBlack pepper powder
  • 1 tspRoasted cumin and coriander powder
  • 1 tspFinely chopped ginger
  • 1/2 tspFinely chopped green chillies
  • Salt to taste
  • 1/2 tspBlack salt
  • leavesFinely chopped mint
  • leavesFinely chopped coriander

Steps

  1. 1

    Wash tamarind 2 times, soak tamarind in 1 cup of water for 10-15mins.

  2. 2

    Mash well to extract juice, once strain well, take a pan and tamarind juice let it boil for 2-3mins, add 1/4 cup of water, if it reduce

  3. 3

    Add sugar/jaggery mix well, add kashmiri red chilies powder, black pepper powder,roasted cumin & coriander powder mix well, salt, black salt simmer for 5-7mins till thick

  4. 4

    Remove from fire, let it cool, garnish with finely chopped ginger, green chillies, mint & coriander leaves and serve with simple cabbage salad

  5. 5

    Tip: store in a bottle in the refrigerator, don't add any garnish.

Tamarind is my all time favourite fruit. My Granny had a huge old tree in her front garden and as a kid i would be eating tamarind all the time as a treat. Sometimes dipped in sugar or even dipped in salt. My Mum and granny taught me to make tamarind Jam when I was younger and every time I east the fruit I think of them in their kitchens. I will have to try this chutney it sounds and looks delicious.
