Sambal (Indonesian chilli sauce...extended)
I travel to Bali often and enjoy the street food there. My Balinese friend makes a great sambal so I always ask her to make one which is very dry and very very hot which allows me to easily carry it home and add more ingredients and oil before canning it. So I do advise, this is not the original recipe for sambal, this explains what I do to it after I get it home.I like to roast/grill the peppers and take the skin off. The taste is really much better.Once you have finished extending your sambal (at step 7) you can put it in the fridge for immediate use or proceed to preserve it for storage as I did in this case. For canning: If your sambal has any low acid content ingredients it needs to be pressure canned. Otherwise boiling water bath will be ok.My next trip to Bali, my friend has promised to show me how to cook her sambal. I hope I can master this teriffic recipe and share with you. There are many other good similar recipes on this site for you to try. Just search for sambal.

Telur Ceplok Masak Kecap (Sunny Side Up Eggs with Sweet Soy Sauce)
Sweet soya sauce is one of the essential ingredients in Indonesian cuisine. It’s made of soy beans and it has dark color just like soy sauce, but it’s sweet and thicker due to the generous addition of palm sugar. A lot of indonesian’s recipes use this sweetened aromatic soy sauce. 😋 Please follow my Instagram @jenscookingdiary if you like my recipes 🙏🏻

Chicken Breast in Green Sauce
With this sauce, I once prepared it with shredded turkey as well. I would have my meal ready a day in advance so that when I got home from work, I just needed to heat it up. My son was 12 years old and it was a struggle to get him to eat. That day, when I got home from work, I was surprised to find that he and one of my nephews who was visiting had eaten all the food. My husband and I were left with nothing. My late father used to say, 'Make that meal more often,' 😂😂. So, here's to my son (Roge) and my nephew Miguel, this meal is for them.

Chinese-style Roasted Fresh Salmon in Nanban Sauce
I really really like Nanban marinade, but the seasoning is hard to get a hold of. I figured I could make something similar with fatty salmon, and tried it out. You do not have to fry in oil, so it is fairly easy. This is not a heavily-marinated type, but as far as eating piping-hot Nanban marinade goes, I think this is pretty good. It is marinaded in Nanban-style sauce, so it's delicious cold, too.Cucumbers and bean sprouts really go well with Nanban sauce, but they're too watery, so I omit them. By swirling the onions and carrots in boiling water, you can instantaneously remove the sharp taste and smell of the onions and get rid of the rawness of the carrots, all the while maintaining the crunchiness and perfect texture. Also, they will instantaneously soak up the flavor of the sauce, and taste like they've been marinated for an hour. The non-marinated portions of the salmon are crispy, so you can enjoy the different textures. Recipe by Nanchi
