This simple recipe makes for an excellent Lunch idea with plain white Rice and Ghee. Known by various names, Asparagus Beans grows in any garden. Yard long Beans, Chinese Long Beans and Snake Beans are some other names this Vegetable is known by. They cook really quickly and are moist and crunchy at the same time and are rich in minerals like Magnesium , Copper , Calcium and Manganese.
As they get done so very quickly without much hassles, it's a go to dish of my folks especially during busy days. It makes for a complete meal that's healthy and nutritious. With any other Vegetable added to it, it becomes a great one pot dish for meals.
This one here is a simple sabzi with just a few handy spices that are easily available in any Indian pantry.

Wash and chop the beans finely. It's the first thing to do. Later gather all the ingredients required.

In a wide mouthed pan, heat the oil and add the ginger garlic green chilli paste. Fry for a minute. Now add the chopped onions. Saute until these are a bit translucent. Also add the powdered spices. Add chopped tomatoes as well. Mix well and cook on a low heat only.

Now is the time to add the long beans or the cowpeas. Also add half of the chopped coriander leaves too. Cover and cook until done. It doesn't take much time. Adjust salt and take it off the heat. Garnish with the other half of the coriander left.

Serve hot alongside rotis or rice. It tastes yum with both. Enjoy!
