Healthy Crisp and Fluffy Berry Muffins With 1 Egg White

If you don't have milk, you can use yogurt.
I recommend using 30 g of honey.
You can use 1/3-1/2 teaspoon of baking powder. Since baking powder has a bitter taste, only use a tiny amount.
If you increase the amount of egg whites, it will be light and fluffy.
If you place the measured sugar around the edges of the bowl, it will be easier to take some cleanly and add it to the meringue.
If you measure out the sugar and honey separately, you can just add it directly to the egg whites. For 5-6 muffins. total 750 calories. Recipe by Hyo-mi

Cooking Instructions
- 1
Preparation: Weigh the ★ ingredients and place in a bowl. If possible, place the sugar closer to the edge. Weigh out and prepare the remaining ingredients. Thaw out the frozen berries. Preheat the oven.
- 2
Meringue: Whip the meringue in a small bowl until stiff peaks form that don't fall out from the bowl even when held upside down. If you can cleanly take some of the ★ sugar (without it being mixed with the other ingredients), add a little bit to the meringue.
- 3
Making meringue usually takes time but since it's just 1 egg white, it will surprisingly whip up quickly when using a whisk.
- 4
Mix: Use the whisk used to make the meringue to combine the ★ ingredients well. If any juice is released from the berries, add that to the batter as well.
- 5
After the ★ ingredients have been mixed, sift in the flour. Place the berries on top and mix them in. Stop mixing before the flour is completely mixed in.
- 6
Add in 1/3-1/2 of the meringue and mix using cutting motions until the flour has been mixed in completely. Don't knead it. It will surprisingly combine quite thoroughly by using cutting motions.
- 7
Once the ★ ingredients have all been mixed together, pour it into the bowl with the meringue and use cutting motions until the meringue is blended in thoroughly. Don't crush the meringue while doing this!!
- 8
Bake: Pour into the muffin cups and bake in a preheated 170°C for 25-30 minutes. Once they have become lightly browned and a skewer is removed without any batter sticking to it, they are done.
- 9
Here's the cross-section the next day. I used a pinch of baking soda for these. I microwaved the frozen blueberries for a very short time (about 10 seconds).
- 10
Since the yogurt has no scent, it's the secret ingredient. If you want to increase the fluffiness, use baking powder and egg whites. See the next step for details.

Cinnamon Nut Crumble Apple Muffins Cinnamon Nut Crumble Apple Muffins
I was chosen as a cooking tester for UCC Gold Special "Special Blend" coffee, so came up with this as a complementary dessert. I posted the recipe here, since I think they came out tasty, and won my husband's approval.Although there are 3 important steps to go through, they are all very easy. In Step 8, the batter will separate, but it will improve after adding the dry ingredients, so don't worry. If the crumble won't separate into small pieces, just chill it in the refrigerator. It will crumble once it has hardened, so there's no need for concern. For 5-7 muffins. Recipe by Lesser Panda cookpad.japan -

I wanted to top muffins with my favorite crumbles. The crumble dough hardens after it cools, so stir again before topping (if the dough is still too soft, add a small amount of flour or almond flour). You could halve the amount of caramel cream and use commercial caramel syrup. Fluffy Healthy Cocoa Muffins with Just 1 Egg White Fluffy Healthy Cocoa Muffins with Just 1 Egg White
I came up with a healthy cocoa muffin recipe that uses just 1 egg white...I recommend adding 30 g of honey.Use 1/3-1/2 teaspoon of baking powder, try not to add too much or it will make your muffins taste bitter. You can add more egg whites to the meringue at Step 2 to get an even fluffier texture.Adding the sugar at the edge when making the meringue will cause the peaks to form better. If you measure the honey and sugar in a different bowl, you can add them to the egg whites directly. Recipe by Hyo-mi cookpad.japan -
