Pomodoro Sauce

Right off the bat here’s an endless list of what this hearty-homey tomato sauce can be used for:
• Ditch the ketchup on pizza and lather this perfectly seasoned sauce instead. Instant elevation to that homemade pizza. And what’s better on homemade pizza than homemade tomato sauce

• Red kidney beans in tomato sauce is another great dance party for this sauce. Just sauté some onions and ginger, add the sauce and beans and a little water, simmer for a bit, watch the magic unfold. And maybe thank me later

Steps

Purée tomatoes in a blender as preferred i.e., leaving some or no chunks
- 2
Heat oil in a shallow saucepan over medium-high heat. Sauté the onions and garlic until tender. Meanwhile season with kosher salt and black pepper. Keep stirring and don’t let onions brown

Add tomatoes, Chilli flakes, sugar and more salt and pepper if need be
- 4
Cook down until thickened - this will take 20 to 30 minutes or more depending on amount of liquid in the tomatoes

Sauce is ready and can be used immediately served over pasta, bread, as pizza or meat sauce, the list is endless

An illustration of how far down the sauce cooks. If you leave too much liquid in it it will taste watered down or spoil fast when stored for later

Or it can be canned/stored in an airtight container in the fridge for 4weeks. Research canning methods and do it appropriately
