Clean and wash the chicken and then put it in a bowl and add 1 tbsp white vinegar and 1 tbsp lemon juice with 1 tsp salt in it and mix well and keep it aside for 10-15 minutes or until the preparation is done. Meanwhile in a chopper finely chop the onions and tomatoes. Make sure the yoghurt is thick and not sour. Tomato paste is totally optional but if you have do use. Dried mint and dried kasoori methi is also optional. If you are using mustard oil allow it to come to smoking point.

In a wok add oil when it gets heated add ginger and garlic paste and mix it then add the chicken pieces to it. Discard the water of chicken before adding it to the oil. After that mix it and cook for 2-3 minutes until the colour of the chicken slightly change. Then add the chopped green chillies and cook for a minute then add the chopped onions and mix well and cook till the rawness of the onions goes away. Next add the chopped tomatoes and cook again for 2 minutes.

Then add all the powdered masalas except garam masala powder and mix really well. The flame is on high from the starting till now. Then add the yoghurt and beat it before adding to the chicken and lower the flame while adding. Mix it very well and then put the flame on medium high cover it and cook it till the chicken gets 90 percent done. Then add the garam masala powder and dried kasoori methi and dried mint. Rub it between your palms before adding the dried mint and kasoori methi.

And it's totally optional then mix it well. Now take a lemon wash it and pat dry it then take out the zest of it make sure you don't take the white part of the lemon else it will taste bitter. Mix it again after adding zest then add half cup of water to it. Mix it again then add the coriander leaves to it cover it and cook for 5 minutes and the handi chicken is ready to be served. Serve it with naan, roti, Paratha, chapati or the choice of bread you like or with rice.
