Strawberry 🍓 Rabdi (with compote)

Soak pistas in water for 1 hour. Peel and cut pistas into two.

For Compote:
Wash well and Chop strawberry🍓. Take them in a nonstick kadhai. Add in sugar. - 3
Cook this mixture by stirring in between occasionally. Check for the thickness. The compote should not be runny.

It should coat the back of spoon. Then switch off gas. Cool this mixture and keep in fridge to chill.

For Rabadi:
Boil 2 litres of milk until reduced to 3/4th litre. Stir in between to avoid milk sticking to the base of the container. Scrape all the malai that sticks to the sides. This makes the rabadi creamier. - 6
When milk is reduced to half quantity, add in 3-4 tbsp sugar. Cook by stirring carefully until 3/4 litte of milk remains. Chill in fridge for 3 hours.

Now take both the chilled rabadi and compote and mix them together. Mix manually, if you like malai-texture. Else, churn with hand blender until smooth.

Add in strawberry essence and mix.
