Ingredients

Serves 2 servings
  • 3eggs
  • Salt, to taste
  • 8-10grape or cherry tomatoes
  • 8-10cooked asparagus spears
  • 3 tablespoonsgrated Parmesan cheese (about 20 grams)
  • Parsley, to taste

Steps

30 minutes
  1. 1

    Wash the asparagus and set aside.

    In a bowl, beat the eggs with the Parmesan and a pinch of salt.

  3. 3

    Line a baking dish with parchment paper and pour in the egg mixture. Add the asparagus and halved tomatoes.

  4. 4

    Bake for about 20 to 25 minutes at 350°F (180°C).
