Thinly slice the green onion and soak in ice water. Fold the nori sheet and cut into thin strips. Make about 5 shallow cuts in the chicken to help it cook evenly.

Heat oil in a skillet over medium heat. Place the chicken skin-side down and cook with a lid on to prevent oil splatter. Once golden brown, flip and cook the other side for about 2 minutes per side.

When both sides are browned, add the sake, cover, and steam over low heat. Meanwhile, quickly mix the soy sauce, mirin, and sugar together.

When most of the sake has evaporated, add the sauce mixture. Return to medium heat and cook until the sauce thickens and coats the chicken. Slice the chicken into bite-sized pieces.

To serve: Place rice in a bowl, top with nori strips, then chicken, sprinkle with sesame seeds, add green onion, and drizzle with the sauce from the pan. Enjoy!
