Ingredients

Makes 4 large or 6 small servings
  1. 1 1/4 cupsall-purpose flour (about 150g)
  2. 2/3 cupwater (about 150cc)
  3. 1 packet(about 10g) dashi granules
  4. Halfa large head of cabbage
  5. Green onions, to taste
  6. 4eggs (about one per serving)
  7. Tempura bits, to taste (more is recommended)
  8. 7-8 cm(about 3 inches) yam
  9. About 4 slices pork belly for okonomiyaki
  10. Optional: Tempura (such as squid tentacles, pumpkin, etc.)
  11. Optional: Black tiger shrimp (perfect for a party!)

Cooking Instructions

    First, make the batter with flour, water, and dashi granules.

    This is the flour I use!

    Add coarsely chopped cabbage (do not wash with water), green onions, tempura bits, and yam. Mix gently from the bottom up with chopsticks.

    After mixing gently, add the eggs. Mix gently from the bottom up with chopsticks.

    The batter is ready! (If adding seafood, mix it in with the batter.)

    If using a griddle, heat it to 450°F (about 230°C) and lightly oil it.

    (If adding tempura, do so before placing the pork. Make sure the pork is on top.)

    Cook for about 5 minutes at 450°F. Do not cover with a lid!

    Flip it over and cover with a lid. Cook for another 5 minutes at the same temperature.
