Smashed cucumber cold noodle salad with soft boiled eggs

Ingredients

  1. 1cucumber
  2. Noodles of choice (I used buckwheat soba)
  3. 2eggs
  4. Sauce / dressing
  5. 2-3 tspsoy sauce
  6. 1 tspminced garlic (or garlic granules)
  7. 1-2 tspsesame oil, plus more to garnish
  8. 1 tsphoney (or brown sugar)
  9. 1-2 tsprice wine vinegar
  10. 1 tspchili crisp, or chili flakes
  11. To garnish
  12. Green onion
  13. Sesame seeds

Cooking Instructions

    Put a pot of water to boil and cook noodles according to packet instructions.

    In the same pot, or a separate pot, add the eggs and boil for 6 minutes.

    While the noodles and eggs are cooking, add the sauce ingredients into a bowl and whisk together. Taste and adjust according to your preference.

    Cut the cucumber into whatever shape you prefer. I cut mine into an accordion and then smashed it with the back of a knife to create scraggly edges which soak up the sauce beautifully.

    Add cucumber to the bowl with the sauce and allow to marinate for a few minutes.

    When the eggs and noodles are done cooking, strain them and rinse with cold water to stop the cooking process.

    Add the noodles to the bowl with the cucumber and sauce. Mix together.

    Peel the eggs carefully, cut in half, and place them on top of the cucumber noodle salad.

    Finely slice the green onion and use as a garnish with a heavy sprinkling of sesame seeds and a drizzle of sesame oil. Enjoy!
