Wash and soak sabudana thoroughly by using a sieve & water, this will get rid of the excess starch. Transfer them in to a bowl & pour the water over it. Let it soak for 3 hours, the sabudana will puff nicely.

To make the mixture add soaked sabudana in a large bowl, add boiled potatoes and mash it.

Add crushed peanut, chopped green chillies and ginger, salt, lemon juice, black pepper powder, sugar. Start mixing all the ingredients together lightly.

Add chopped green coriander, give a nice mix.

For shaping vadas, apply a very little water on hands, take a spoon ful of mixture, formed a roundel, flatten it into a patty shape by patting itin between palms. Heat oil in a pan fry vadas on medium flame.

Fry until crisp & golden brown. Sabudana potato vada is ready to serve. Enjoy on vrat or fasting.
