Ingredients

  1. 2 1/2 cupsprepared mashed potatoes
  2. 2eggs
  3. 1/3 cupShredded cheddar cheese
  4. Leftover turkey, cut
  5. Sprinkle Black pepper
  6. Sprinkle Crushed red pepper
  7. Sprinkle Dried parsley flakes
  8. Olive oil cooking spray
  9. Extra shredded cheddar cheese

Cooking Instructions

    In a large bowl, place 2 1/2 cups of your prepared, leftover mashed potatoes from Thanksgiving ……..

    Add to mashed potatoes your 2 eggs and mix well ………

    Add your shredded cheddar cheese to mash potato mixture, mix well……

  4. 4

    Place several spoonfuls of your mashed potato mixture into each muffin cup that has been sprayed with olive oil cooking spray …….

    Add to cups some leftover turkey, cut up or shredded, and top with a little bit of black pepper, crushed red pepper, dried parsley flakes and then top with extra shredded cheddar cheese……..

    Bake in a preheated 400 degree oven for 25 ~ 30 minutes, or until edges are golden………

    Let mashed potato cups cool for a few minutes before removing from your muffin tin, serve and enjoy 😉 !
