  1. 7 ozsmoked salmon
  2. 1cucumber
  3. 1 cupheavy cream
  4. 7 ozfresh goat cheese
  5. 2-3 tablespoonslemon juice
  6. 3 tablespoonsfresh or dried chives

Cooking Instructions

    Wash and cut the cucumber into very small cubes. Let them drain in a colander with coarse salt for 20 minutes. Rinse and drain them.

    Whip the cream into whipped cream.

    In a mixing bowl, combine the fresh goat cheese, lemon juice, and chives. Gradually fold in the whipped cream.

    Cut the salmon into small pieces.

    For assembly: layer cucumber, salmon, and goat cheese whipped cream.
