Basic and Simple Lentil Flatbread/Pancake

It's March! 3 months into the year and the month when 2 of us turn 12 and 14🥳! We had posted another lentil flatbread/pancake recipe before and thought we should post another one for March 2026, but a lot simpler and basic but still yummy. We hope you enjoy making it and eating it with your favourite sauces and dips.

Ingredients

2hr soak 10mins prep, 3mins cook on each side
5 people as a whole meal with sauce
  1. Main Ingredients:
  2. 3 cupsdry lentils plus water to soak them in
  3. 3 cupswater
  4. Seasonings:
  5. 1low salt stock cube or regular just half the salt
  6. 2 teaspoonsonion powder
  7. 1 tablespooncurry powder
  8. 1 teaspoonsalt and pepper
  9. Condiments
  10. 1/4-1/3 cupcoconut or olive oil for frying

Cooking Instructions

    Soak the lentils in water for at least 2 hr. The lentils literally will double in size so make sure your bowl is big enough. Keep covering the lentils with water when they are over the water level because of swelling.

    Wash the lentils thoroughly when the soaking time is done and add them to your blender. Yo it should now have 6 cups of lentils

    Pour in the water and add the seasonings into the blender.

    Blend on medium to high speed until smooth. Make sure no lentils are whole. If your blend is small. Do 3 cups of lentils, 1 1/2 cup of water and half the seasonings and then do the other half of everything.

    Heat a little of the oil in your pan on high heat but don’t burn the oil. Use a 1/2 cup to spoon the lentil mixture into the pan you don’t need to use the whole cup. And quickly spread it around very thinly.

    Turn the heat down to medium high heat and let the mixture fry for about 3mins

    Flip and fry for 3mins

    Take the pancake out of the pan and place on a plate with kitchen towel on and start on the next one following the second part of step #5 starting with the oil.

    After the pancakes are done, serve with your favourite filling. How about eating it with our basic hummus for a high protein meal or with our salad if you have the time for a healthy lunch?
