Ingredients

  • 1lemon (juice and zest)
  • 3eggs (room temperature)
  • 1/2 cupgranulated sugar (about 100 grams)
  • 1/2 cupsunflower oil (about 120 ml)
  • 2 cupsall-purpose flour (about 250 grams)
  • 1 packetbaking powder (about 2 1/2 teaspoons or 16 grams)
  • 3 1/2 ozmilk chocolate (about 100 grams)

  • 1large mixing bowl
  • 1medium mixing bowl
  • 1lemon zester or grater
  • 1citrus juicer
  • 1electric mixer
  • 1kitchen scale
  • 1tablespoon
  • 1 (9 inch)round cake pan (about 22 cm)
  • 1 sheetparchment paper
  • 1fine mesh sieve
  • Storage
  • Store the soft lemon and milk chocolate cake covered at room temperature for up to 2-3 days

    Wash the lemon and grate the zest, then juice and strain the lemon.

    In a large mixing bowl, beat the eggs with the sugar for about 8-9 minutes, or until the mixture is pale and fluffy.

    Slowly add the oil, lemon juice, and grated zest, mixing for another couple of minutes.

    In a medium bowl, sift together the flour and baking powder, then add them to the egg mixture one tablespoon at a time.

    If you have milk chocolate candies, you can use those, or simply chop a milk chocolate bar into small pieces and add it to the batter.

    Line the bottom of a 9-inch springform pan with parchment paper. Pour the batter into the pan and bake in a preheated oven at 350°F (180°C) for 40 minutes on the middle rack.
