The sweet and tangy flavor of apricots pairs perfectly with graviera cheese.

Cut the apricots in half and remove the pits.

Dip the graviera cheese in water, then coat it with flour.

Place the apricots in a hot skillet with olive oil and caramelize for 5 minutes, turning once or twice.

Transfer the apricots to a serving plate.

Add the graviera cheese to the skillet and quickly fry on both sides.

Remove the cheese and place it on top of the apricots. Drizzle with balsamic glaze and serve.
