Preheat oven to 350°F.

Using a sharp knife, pierce the sausage casings with 4-5 small holes on each side. Add the olive oil and sausages to a cold pan and cover.

Over medium-high heat, fully cook and brown the sausage links on all sides. Slice and set aside.

Spread the garlic butter onto both sides of each hoagie roll before placing in the oven. Check frequently for golden-brown while continuing to the next step.

Add the sliced vegetables and seasonings to the heated pan. Cover and cook until the peppers are softened and the onions are translucent, stirring occasionally.

Add the sausage back to the pan with the garlic and stir. Add the wine, deglazing the hot pan as you stir. Continue to cook another 5-10 minutes, until reduced. Sprinkle with Parmesan.

Once the rolls are golden-brown with crisped edges, add 2 slices of mozzarella to each roll. Add a generous amount of sausage and peppers to each hoagie roll.

Serve immediately and enjoy!
