Hummus is one of my favourite food from the Middle East and Beetroot being so healthy, I made with Beetroot pulp. It’s super easy and on sourdough bread it tastes delicious

Soak chickpeas 24 hrs and boil with 1/2 tsp baking soda for 6 whistles in pressure cooker, let it depressurise and discard the water and peel the skin, set aside

Wash the Beetroot and roast in MW for 5 mins, set aside, peel the skin and add to blender. Make a purée
- 3
Add the boiled chickpeas to the Beetroot, add cloves, tahini paste, olive oil, salt, cayenne powder and blend smooth

Plate on a bowl and garnish with boiled chickpeas, olive oil and few coriander leaves, sesame seeds and enjoy as is or spread on sourdough bread
