This methi na gota is a classic Gujrati favourite, loved at highway dhabas and street stalls alike and the perfect thing to make while methi is in season.

In a large bowl, sieve the besan along with baking soda. Add the fine rava, turmeric powder, red chilli powder, sugar powder, mix it properly and gradually add water while whisking continuously to form a smooth, thick besan batter, keep aside let it rest for 10 minutes.

After resting, add chopped methi to the batter along with remaining ingredients, mix gently using a spatula. Addd 2 tbsp of hot oil from the frying kadai into the besan mixture, mix it well. This step is important as it helps make the gota crisp on the outside while staying moist inside.

Heat sufficient oil in a kadai, drop small portions of batter, fry them on low heat till crispy and golden brown, then take out in the absorbent paper. Gota is ready.

Methi na gota is ready to serve with chutney.
